I believe that in a commercial setting where you are running with weights of 5lb or more in a single lot, you should do what you can to control that moisture. Avoiding any chances of mold developing, with yields and quality rising throughout the industry it raises the chances for botrytis as well. Doing anything you can to avoid this in commercial setting would be the best move, in our opinion
